Cooking with Moderni: Quesadillas


YUMMY YUMMY IN MY TUMMY. Moderni is cooking something up.


Benefits to eating healthy go beyond weight management and having more energy, it can also help with chronic inflammation and pain syndromes and help battle a (sometimes never ending) cycle of those.


I love making this meal because:

#1 it's super simple, quick and great for a busy hectic weeknight

#2 it uses simple and good for you ingredients

#3 it is easy to tailor to your dietary needs

Baby Bella Mushrooms- These are a fantastic choice as they are not only low in calories, but they also pack Vitamins B & D, as well as minerals like copper and selenium. Both copper and selenium have antioxidant properties (helping to fight off damage from free radicals) and protect our cells from stress. Copper has benefits for the nervous system (among many other things) and helps with the synthesis (production) of neurotransmitters such as dopamine and norepinephrine. These help support brain function and mood. I'd say that's a no brainer.... (haha). If you are vegetarian or vegan the meaty texture of the mushrooms recreates some of that density in the quesadillas.


Spinach- An excellent addition to pack this quesadilla with. Spinach has essential nutrients like iron, calcium, and vitamins A &C, which can support bone health, boost your immune system, and promote healthy vision. Not only does the fresh taste of spinach make these meal taste "just out of the garden", but it adds that vibrant green color!


Zucchini- Zucchini is also low in calorie count but is high in fiber and rich in vitamins and minerals such as magnesium, potassium and folate. These can also be supportive for the nervous system, help with immune system function, heart health, eye health and overall wellbeing. Zucchini is also easy to grate if you have picky eaters it can be easily hidden in meals, even muffins!


Mozzarella (cheese)- In moderation, cheese is a great source of protein and calcium. This is essential for building and maintaining strong bones and muscles.

You can pick any cheese you'd like, but I love the mozzarella paired with these ingredients!


Protein- If you want to add an additional source of protein, I love this with chicken or shrimp. You can also add tofu as well.


HOW TO MAKE:

As promised, this will be easy! See links below for products I used.

Serving 4 people


8 pack of regular sized tortillas (soft)

12oz bag of baby spinach

10oz bag of shredded mozzarella cheese

olive oil

8oz Baby bella mushrooms (get sliced for shortcuts!)

1 Medium Zucchini


  1. Wash and dry all produce

  2. Chop spinach, zucchini and mushroom. I prefer my mushrooms a little thicker for texture, but this is all preference based. Chopping the spinach helps it to lie flat on the tortillas and makes them easier to pack.

  3. Turn oven to BROIL (LO)

  4. Use a sheet pan that will fit 4 tortillas flat side-by-side

  5. Oil one side of 4 tortillas and place the oiled side down on the pan

  6. Sprinkle a light layer of cheese along the rim of the tortilla (each)

  7. Top with spinach, zucchini and mushroom, trying not to overlap onto the "rim of cheese", this is our glue

  8. Sprinkle mozzarella on top, personal preference but you can see about how much I use in photo above

  9. Oil one side of the remaining 4 tortillas and place on top with oil side up

  10. Place in oven on top rack for about 3 minutes. Always peek frequently at your food when it is on BROIL as some oven broil faster.

  11. When the tortillas look crispy and are starting to turn golden brown in a few spots, take out of the oven and carefully flip the quesadillas. (I like to do this using a pancake flipper and a tongs).

  12. Place back in oven for 3 minutes until golden brown

  13. Take out, let cool and cut into desired size slices.......oh, and EAT!


Serve with mango salsa, guacamole, or if you're feeling ambitious...some homemade pico de gallo!


Tips: If you're adding protein just make sure it is cooked to your liking and put in with all the other ingredients. If you need a shortcut, you can do canned chicken or pre-pulled chicken.
